Meeting the design program and establishing an aesthetic with the low ceiling clearance presented a challenge and opportunity with this project. Working without the drama that would be afforded by a high ceiling, we sought to break down a rather large restaurant space into a series of carefully composed dining rooms. Each space is oriented with an understanding of the diner’s first impression (arriving) and their stationary position (dining). The perspectives offered at either end of the space draw the eye. The composed rooms are framed by floating custom crowns, white lacquered service furniture, and ribbed glass.

There was a concept established early on in the process whereby known natural elements would be reinterpreted in contracted form. Central to this is the empirical geometry used to create a custom handcrafted metal tree that climbs from the cellar floor to the top of the ground floor. Individual branches of cold rolled steel are reinforced by connecting ‘knuckles’ binding 19 branches into a hexagonal pattern. The angles and shapes created by the tree reinforce the gastronomic themes of Chef Dan Kluger’s food. And the tree itself holds the walnut ceiling that divides the larger dining room.

The bar lights are made from natural clear walnut. Accenting the white wash walls and natural walnut, is the greenery of the plantings and table décor with the Holland orange color of the window frames. Custom service stations are strategically located so servers can attend their tables without hovering. Glassware and water vases at the stations make for an pleasing aesthetic composition against the ribbed glass.
